Strawberry Cheesecake Crunch Bites

Ingredients:

For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup sour cream

For the Crunch Topping:

1/2 cup granola or crushed cereal

1/4 cup chopped pecans (optional)

2 tablespoons butter, melted

For the Strawberry Topping:

1 1/2 cups fresh strawberries, diced

2 tablespoons granulated sugar

Directions:

Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or lightly grease the wells.

To make the crust, combine graham cracker crumbs, sugar, and melted butter in a bowl. Stir until the mixture is evenly coated.

Press a tablespoon of the crust mixture into the bottom of each muffin well to form a crust layer. Bake for 5-7 minutes, or until golden. Remove from the oven and set aside to cool.

For the cheesecake filling, beat the softened cream cheese, powdered sugar, and vanilla extract in a medium bowl until smooth and creamy. Add the sour cream and mix until fully combined.

Spoon or pipe a generous amount of the cheesecake filling into each cooled muffin well over the crust. Smooth the tops with a spatula.

For the crunch topping, combine granola (or crushed cereal), chopped pecans (if using), and melted butter in a small bowl. Stir until the mixture is well coated.

Sprinkle the crunch topping over each cheesecake bite, pressing gently to ensure it sticks.

Return to the oven and bake for 8-10 minutes, until the topping is golden and the cheesecake filling is set. Let cool to room temperature.

For the strawberry topping, toss the diced strawberries with sugar in a small bowl. Let them sit for 5-10 minutes to release their juices.

Spoon the strawberry topping over the cooled cheesecake crunch bites just before serving.

Refrigerate any leftovers in an airtight container for up to 3 days.
