Spicy Mac & Cheese with Buffalo Chicken 🧀
Ingredients:
8 oz elbow macaroni
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1 1/2 cups shredded cheddar cheese
1/2 cup mozzarella cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper to taste
2 cups cooked chicken breast, shredded
1/3 cup buffalo wing sauce (mild or hot, your choice)
1 tablespoon ranch or blue cheese dressing (optional for topping)
Green onions or parsley for garnish (optional)
Directions:
Cook macaroni according to package directions. Drain and set aside.
In a large saucepan, melt butter over medium heat.
Stir in flour and cook for 1 minute, stirring constantly.
Slowly whisk in the milk until smooth. Cook for 3–4 minutes until thickened.
Stir in cheddar and mozzarella cheese until melted.
Add garlic powder, onion powder, salt, and pepper. Stir well.
Mix in the cooked pasta and stir to coat with the creamy cheese sauce.
In a separate bowl, toss shredded chicken with buffalo sauce until fully coated.
Add buffalo chicken into the cheesy pasta and stir everything together.
Cook on low heat for another 2–3 minutes to heat through.
Drizzle with ranch or blue cheese dressing if desired, and top with chopped green onions or parsley. Serve warm!
