Rosemary Garlic Cod with Lemon Butter Gnocchi
Pan-Seared Aromatic Cod Fillets with Citrus Herb Potato Dumplings
Ingredients:

4 cod fillets (about 6 oz each), skin removed
2 tablespoons olive oil
3 cloves garlic, minced, divided
2 tablespoons fresh rosemary, finely chopped
1 teaspoon lemon zest
Salt and freshly ground black pepper, to taste
1 lb store-bought or homemade potato gnocchi
4 tablespoons unsalted butter
Juice of 1 large lemon
2 tablespoons fresh parsley, chopped
1 cup cherry tomatoes, halved
2 cups baby spinach
1/4 cup grated Parmesan cheese (optional)
Lemon wedges, for serving
Red pepper flakes (optional)

Directions:

Pat cod fillets dry with paper towels. In a small bowl, combine 1 tablespoon olive oil, half the minced garlic, rosemary, lemon zest, salt, and pepper.
Rub the herb mixture all over the cod fillets. Let marinate at room temperature for 15 minutes.
Meanwhile, bring a large pot of salted water to a boil.
Heat the remaining tablespoon of olive oil in a large non-stick skillet over medium-high heat.
Place the cod fillets in the hot skillet and cook for 3-4 minutes per side, until golden brown and cooked through (fish should flake easily with a fork). Transfer to a plate and cover to keep warm.
Cook the gnocchi according to package instructions until they float to the surface (usually 2-3 minutes). Drain well.
In the same skillet used for the cod, melt the butter over medium heat. Add the remaining garlic and cook for 30 seconds until fragrant.
Add the lemon juice, cherry tomatoes, and a pinch of salt. Cook for 2 minutes until tomatoes begin to soften.
Add the drained gnocchi to the skillet and toss to coat in the lemon butter sauce. Cook for 1-2 minutes until the gnocchi starts to crisp slightly around the edges.
Add spinach and cook until just wilted, about 1 minute.
Remove from heat and stir in the chopped parsley and Parmesan cheese (if using).
Serve the cod fillets on top of the lemon butter gnocchi. Garnish with lemon wedges and red pepper flakes if desired.
