🍯 Brown Sugar & Cinnamon Swirl Pancakes 🥞
Ingredients
For the Pancake Batter:
1½ cups all-purpose flour (or gluten-free 1:1 blend)
2 tablespoons brown sugar
2 teaspoons baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
1 cup whole milk (or dairy-free alternative)
1 large egg
2 tablespoons unsalted butter, melted (plus extra for cooking)
1 teaspoon pure vanilla extract
½ cup plain Greek yogurt or sour cream (for extra fluffiness)
For the Cinnamon Swirl:
3 tablespoons brown sugar
1 teaspoon ground cinnamon
1 tablespoon melted butter
For the Vanilla Glaze:
½ cup powdered sugar
1–2 tablespoons milk or cream
½ teaspoon pure vanilla extract
Pinch of salt
Instructions
Prep your pan: Heat a nonstick skillet or griddle over medium-low heat. Lightly grease with butter or oil.
Make the batter: In a large mixing bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt. In a separate bowl, whisk milk, egg, melted butter, vanilla, and yogurt until smooth. Pour wet ingredients into dry and stir gently until just combined—batter should be slightly lumpy. Let rest 5 minutes while you prep the swirl.
Prepare the swirl: In a small bowl, combine brown sugar and cinnamon. Stir in melted butter until it forms a thick, sandy paste.
Cook the pancakes: Pour ⅓ cup batter onto the hot skillet. Immediately spoon 1 teaspoon of the cinnamon-brown sugar swirl mixture onto the center of the pancake. Use a toothpick or skewer to gently swirl it into the batter in a figure-eight motion—don’t overmix, just create marbled ribbons. Cook for 2–3 minutes, until bubbles form on top and edges look set. Flip and cook another 1–2 minutes until golden brown. Repeat with remaining batter, adjusting heat as needed.
Make the glaze: While pancakes cook, whisk powdered sugar, milk, vanilla, and salt in a small bowl until smooth and pourable. Add more milk if too thick, or more sugar if too thin.
Serve warm: Stack 2–3 pancakes per plate. Drizzle generously with vanilla glaze while still warm. Serve immediately with extra butter or a side of fresh berries.
