Caramel Apple Dessert Cups
Ingredients:
- 3 cups Granny Smith apples (peeled, cored, and finely diced)
- ⅓ cup light brown sugar, packed
- 3 tablespoons salted butter
- 1 teaspoon ground cinnamon
- 2 cups crushed vanilla wafers
- ¼ cup salted butter, melted and cooled
- 3.4 ounce instant vanilla pudding mix
- 1 ¼ cup cold whole milk
- ¾ cup salted caramel sauce, divided ¼ cup and ½ cup
- 1 cup cold heavy whipping cream
Directions:
1. In a medium skillet, melt 3 tablespoons of salted butter over medium heat. Add the diced apples, light brown sugar, and ground cinnamon. Cook, stirring occasionally, until the apples are tender and caramelized, about 8-10 minutes. Remove from heat and let cool.
2. In a bowl, combine crushed vanilla wafers and melted butter. Mix well until crumbs are evenly coated. Set aside.
3. Prepare the vanilla pudding by whisking the instant pudding mix with cold whole milk according to package instructions. Let it set for 5 minutes.
4. In a separate chilled bowl, whip the cold heavy whipping cream until soft peaks form. Gently fold half (½ cup) of the salted caramel sauce into the whipped cream.
5. To assemble the dessert cups, start with a layer of the vanilla wafer crust at the bottom of each serving glass or cup.
6. Add a layer of caramelized apples, followed by a layer of vanilla pudding.
7. Top the pudding with a generous dollop of the caramel whipped cream.
8. Drizzle the remaining ¼ cup caramel sauce over the top of each dessert cup.
9. Repeat layers if your glasses allow, then refrigerate the cups for at least 1 hour before serving to let the flavors meld.
