Keto Bread Loaf
Ingredients
2 cups almond flour
¼ cup coconut flour
1 tbsp baking powder
½ tsp salt
5 large eggs
½ cup unsalted butter (melted) or coconut oil
½ cup unsweetened almond milk
1 tbsp apple cider vinegar
Instructions
Preheat oven
Set oven to 350°F (175°C). Line a loaf pan with parchment paper.
Mix dry ingredients
In a bowl, whisk together almond flour, coconut flour, baking powder, and salt.
Mix wet ingredients
In another bowl, beat eggs, then add melted butter, almond milk, and vinegar.
Combine
Stir dry ingredients into wet until a smooth batter forms.
Bake
Pour batter into prepared loaf pan.
Bake for 45–50 minutes, until golden and a toothpick inserted comes out clean.
Cool & slice
Let cool in the pan for 10 minutes, then transfer to a rack before slicing.
Tips
For a fluffier loaf, separate the eggs and whip the egg whites to stiff peaks, then fold into the batter.
Add garlic powder, rosemary, or cheese for a savory twist.
Store in the fridge up to 5 days, or freeze slices for longer.
