Basil Pesto Salmon with Zucchini Orzo
Herb-Infused Basil Pesto Salmon over Creamy Zucchini Orzo

Ingredients:
4 salmon fillets (about 6 oz each)
2 cups orzo pasta
2 medium zucchinis, diced
3 tablespoons basil pesto (store-bought or homemade)
2 tablespoons olive oil
2 garlic cloves, minced
1/2 cup grated Parmesan cheese
Juice of 1 lemon
Salt and pepper to taste
Fresh basil leaves for garnish
Directions:
Bring a large pot of salted water to a boil and cook orzo according to package instructions until al dente. Drain and set aside.
While the orzo cooks, season salmon fillets with salt, pepper, and a squeeze of lemon juice.
Heat 1 tablespoon olive oil in a skillet over medium heat. Cook salmon fillets for 3-4 minutes per side until golden and cooked through. Remove and keep warm.
In the same skillet, add remaining olive oil, garlic, and zucchini. Sauté for 3-4 minutes until zucchini is tender.
Stir in cooked orzo, basil pesto, and Parmesan cheese. Toss well to coat and add extra lemon juice if desired.
Plate the zucchini orzo, top with salmon fillets, and garnish with fresh basil leaves. Serve immediately.
