Almond Flour Shortbread Cookies
Ingredients:
- 1 1/2 cups almond flour
- 3 tablespoons maple syrup
- 3 tablespoons melted coconut oil
- 1/4 teaspoon salt (optional)
- 1/2 teaspoon vanilla extract (optional)
- 1/2 teaspoon almond extract (optional)
- Sprinkles (optional)
Directions:
1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine almond flour, maple syrup, melted coconut oil, and salt if using. Stir until a dough forms.
3. Add vanilla and almond extracts if desired, mixing well to incorporate.
4. Roll the dough into small balls and place them on the baking sheet. Flatten each ball gently with your palm or the bottom of a glass to form cookie shapes.
5. Sprinkle with sprinkles if desired for a festive touch.
6. Bake for 12-15 minutes or until the edges are golden brown.
7. Remove from the oven and allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
