Fried Green Tomato Parmesan
π Ingredients (Serves 4-6)
For the fried green tomatoes:
4 large green tomatoes, sliced 1/4-inch thick
1 tsp salt (for sweating tomatoes)
1 cup all-purpose flour
2 large eggs
1/4 cup buttermilk
1 cup cornmeal
1/2 cup breadcrumbs (Italian seasoned)
1/2 tsp garlic powder
1/2 tsp paprika
Vegetable oil (for frying)
For the Parmesan layering:
2 cups marinara sauce (homemade or jarredβjust good quality)
2 cups shredded mozzarella
1/2 cup grated Parmesan
1/4 cup fresh basil or parsley (chopped, optional)

Prep the tomatoes: Lay slices on paper towels and sprinkle with salt. Let sit for 20 minutes to draw out moisture. Pat dry.
Set up breading station:
Bowl 1: Flour
Bowl 2: Eggs + buttermilk (whisked)
Bowl 3: Cornmeal + breadcrumbs + garlic powder + paprika
Bread each tomato: Dredge in flour β dip in egg mix β coat in crumb mix. Press to make it stick.
Fry: Heat 1/2-inch of oil in a skillet over medium heat. Fry tomato slices in batches until golden brown and crispy (about 2β3 mins per side). Drain on paper towels.
Build it Parmesan-style:
In a 9x13 baking dish, spread a thin layer of marinara.
Layer fried tomatoes.
Spoon marinara over each.
Sprinkle mozzarella and Parmesan on top.
Repeat layers (like lasagna) until you run outβusually 2 layers.
Bake at 375Β°F for 20β25 minutes until bubbly and cheese is golden.
Cool & serve: Let it rest for 10 mins so it holds together. Garnish with fresh basil or parsley if you're fancy.
