Creamy Garlic Butter Shrimp Penne with Steamed Broccoli

Ingredients:

250g penne pasta

1 lb (450g) large shrimp, peeled and deveined

2 cups broccoli florets

3 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon crushed red pepper flakes (optional)

1/4 teaspoon black pepper

Salt to taste

1/2 teaspoon paprika

1/2 cup unsweetened coconut cream or dairy-free cream

1/4 cup grated parmesan cheese (optional or use non-dairy alternative)

Zest of 1 lemon

Juice of half a lemon

Fresh parsley, chopped (for garnish)

Directions:

Bring a large pot of salted water to a boil. Cook the penne according to package instructions. In the final 2–3 minutes, add broccoli florets. Drain and set aside.

In a large skillet over medium heat, melt the butter with olive oil. Add garlic and red pepper flakes (if using), and sauté for 30 seconds until fragrant.

Add the shrimp to the skillet. Season with salt, pepper, and paprika. Cook 2–3 minutes on each side, or until shrimp is pink and opaque. Remove shrimp and set aside.

In the same skillet, pour in coconut cream and stir until slightly thickened. Add lemon zest and juice. Let it simmer for 2 minutes.

Toss in the cooked pasta, broccoli, and shrimp. Stir to combine and heat through.

Optional: Add grated parmesan or a dairy-free substitute.

Garnish with fresh parsley and serve immediately.
