Decadent Biscoff Layered Cheesecake Cups
Ingredients:
For the Crust Layer:
1½ cups Biscoff cookies, crushed
4 tbsp unsalted butter, melted
For the Cheesecake Layer:
8 oz (225g) cream cheese, softened
1 cup heavy whipping cream
½ cup powdered sugar
1 tsp vanilla extract
For the Biscoff Layer:
¾ cup Biscoff cookie butter (spread), melted slightly for easy layering
For Topping:
Extra whipped cream
Crushed Biscoff cookies

Instructions:
1. Prepare the Crust:
Mix crushed Biscoff cookies with melted butter.
Spoon about 2 tablespoons into the bottom of each serving glass and lightly press down.
2. Make the Cheesecake Filling:
In a bowl, beat softened cream cheese until smooth.
In another bowl, whip the heavy cream, powdered sugar, and vanilla until stiff peaks form.
Gently fold the whipped cream into the cream cheese until fully combined.
3. Layer the Cups:
Add a layer of cheesecake filling over the crust.
Spoon a layer of melted Biscoff spread on top.
Repeat with another layer of cheesecake filling and another drizzle of Biscoff.
4. Decorate:
Pipe extra whipped cream on top.
Sprinkle generously with crushed Biscoff cookies.
5. Chill:
Refrigerate for at least 1–2 hours before serving to set.
