Nova Scotia Seafood Chowder
Ingredients:
- 2 tbsp butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 celery stalks, diced
- 2 medium potatoes, diced
- 4 cups seafood broth
- 1 cup heavy cream
- ½ lb haddock, cut into chunks
- ½ lb shrimp, peeled and deveined
- ½ lb scallops
- ½ cup cooked lobster meat (optional)
- 1 cup corn kernels
- ½ tsp dried thyme
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Steps:
1. In a large pot, melt butter over medium heat. Add onion, garlic, and celery. Sauté until soft.
2. Add diced potatoes and seafood broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (about 10 minutes).
3. Pour in heavy cream and stir well.
4. Add haddock, shrimp, scallops, and lobster (if using). Simmer for 5-7 minutes until seafood is cooked through.
5. Stir in corn, thyme, salt, and pepper. Let cook for another 2 minutes.
6. Garnish with fresh parsley and serve hot.
