😋 Deliciously Crunchy Guilt-Free Chia & Seed Bites - Perfect Snack ✨

Ingredients:
1 cup (135g) Mixed Seeds (e.g., pumpkin seeds, sunflower seeds, sesame seeds)
1/2 cup (90g) Chia Seeds
1/2 cup (45g) Rolled Oats (use certified GF if needed)
1/4 cup (30g) Chopped Nuts (e.g., almonds, walnuts) (optional)
1/4 cup (35g) Dried Fruit, chopped (e.g., cranberries, raisins) (optional)
1/4 cup (60ml) Maple Syrup or Agave Nectar
1/4 cup (60g) Seed Butter (e.g., sunflower seed butter, tahini)
1 teaspoon Vanilla Extract
1/4 teaspoon Salt

Directions:
1. Line an 8x8 inch (20x20 cm) square baking pan with parchment paper, leaving some overhang on the sides for easy removal.
2. In a large bowl, combine the mixed seeds, chia seeds, rolled oats, chopped nuts (if using), and dried fruit (if using). Stir well.
3. In a small saucepan, gently heat the maple syrup (or agave), seed butter, vanilla extract, and salt over low heat. Stir continuously until the mixture is smooth and well combined. Do not boil.
4. Pour the warm liquid mixture over the dry seed and oat mixture in the large bowl.
5. Stir thoroughly until all the dry ingredients are evenly coated and the mixture is sticky.
6. Transfer the mixture to the prepared baking pan. Press down very firmly and evenly using the back of a spoon or your hands (cover with parchment paper first to prevent sticking). Ensure it's compacted well, especially in the corners.
7. Place the pan in the refrigerator or freezer for at least 30 minutes (freezer) or 1 hour (refrigerator) to firm up.
8. Once firm, use the parchment paper overhangs to lift the block out of the pan.
9. Place it on a cutting board and cut into squares or bars of your desired size.
10. Store the bites in an airtight container in the refrigerator for up to a week or in the freezer for longer storage.
