🇮🇹 Spaghetti con le Cozze (Spaghetti with Mussels)
A coastal Italian classic—fresh mussels tossed with garlic, wine, and pasta in a light tomato sauce!
📝 Ingredients:
• 1 pound mussels, cleaned and debearded
• 12 oz spaghetti
• 2 cloves garlic, minced
• 1/4 cup white wine
• 1/2 cup cherry tomatoes or 1/2 cup tomato sauce
• 3 tbsp olive oil
• Fresh parsley, chopped
• Salt and pepper
👩🍳 Instructions:
1️⃣ Cook spaghetti in salted water until al dente. Reserve 1/2 cup pasta water and drain.
2️⃣ In a large pan, heat olive oil and sauté garlic until fragrant.
3️⃣ Add tomatoes and cook until softened (or stir in tomato sauce).
4️⃣ Add mussels and white wine. Cover and cook until mussels open, about 5–7 minutes. Discard unopened ones.
5️⃣ Toss in the drained spaghetti and mix gently. Add pasta water as needed for sauciness.
6️⃣ Finish with chopped parsley and a drizzle of olive oil.
