CREAMY BEEF STROGANOFF WITH TORTELLINI IN A SKILLET
Ingredients:
1 lb ground beef
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
2 cups beef broth
1 cup heavy cream
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (9 oz) package refrigerated cheese tortellini
1/2 cup sour cream
1 tablespoon fresh parsley, chopped (for garnish)
1/4 cup grated Parmesan cheese (optional, for serving)
Directions:
Brown the Beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease if needed.
Sauté the Aromatics: Add the chopped onion to the skillet and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
Create the Sauce: Pour in the beef broth, heavy cream, Worcestershire sauce, Dijon mustard, dried thyme, salt, and black pepper. Stir everything together and bring to a gentle simmer.
Cook the Tortellini: Add the cheese tortellini directly into the skillet, making sure they’re submerged in the sauce. Cover and let cook for about 5-7 minutes, stirring occasionally, until the tortellini are tender.
Make It Creamy: Reduce the heat to low and stir in the sour cream, mixing until smooth and creamy. Let everything simmer for another minute until warmed through.
Garnish & Serve: Remove from heat, sprinkle with fresh parsley, and serve with grated Parmesan if desired. Enjoy!
