Light, creamy, and delicately sweet—this ricotta cake melts in your mouth!
Ingredients:
• 2 cups ricotta cheese
• 1 cup sugar
• 3 eggs
• 1 cup all-purpose flour
• 1 tbsp lemon zest
• 1 tsp baking powder
• 1 tsp vanilla extract
• Pinch of salt

Instructions:
1. Preheat oven to 180°C (350°F). Grease a round cake tin.
2. In a bowl, whisk ricotta, sugar, eggs, lemon zest, and vanilla until smooth.
3. Sift in flour, baking powder, and salt. Mix until combined.
4. Pour batter into the tin and smooth the top.
5. Bake for 45–50 minutes or until golden and set.
6. Let cool completely before serving. Optional: dust with powdered sugar.
