Seafood Medley over Creamy Grits 🍤🦞

📝 Ingredients:
For the Creamy Grits:
1 cup quick grits
4 cups water or chicken broth
2 tbsp butter
1/2 cup shredded cheese (optional)
Salt to taste
For the Seafood Topping:
1 lobster tail, halved and broiled
200g shrimp, peeled and deveined
150g bay scallops
2 slices bacon, chopped
1/2 tomato, diced
1 green onion, sliced
2 garlic cloves, minced
1 tbsp lemon juice
Salt, pepper, and paprika to taste
Fresh parsley for garnish
Lemon and lime wedges for serving
🍽️ Directions:
1️⃣ Cook the Grits:
In a saucepan, bring broth or water to a boil. Slowly stir in grits, reduce heat to low, and cook until thickened (about 5–7 minutes). Stir in butter and cheese (if using). Season with salt.
2️⃣ Prepare the Lobster:
Cut lobster shell open, season the meat with salt, pepper, and a touch of paprika. Broil for 6–8 minutes until opaque and slightly golden on top.
3️⃣ Sauté the Seafood:
In a skillet, cook chopped bacon until crispy. Remove and set aside, leaving some bacon fat in the pan. Add garlic, shrimp, and scallops. Sauté until just cooked (3–5 minutes), then add diced tomato, green onion, lemon juice, and seasonings. Toss everything together.
4️⃣ Assemble the Plate:
Spoon creamy grits onto a plate. Top with the sautéed shrimp, scallops, and crispy bacon. Place the broiled lobster tail on the side.
5️⃣ Garnish & Serve:
Sprinkle chopped parsley and serve with lemon/lime wedges for a zesty finish.
