Garlic Butter Chicken Bites with Creamy Parmesan Pasta
Ingredients:
1 lb chicken breast, cut into bite-sized pieces
4 tablespoons unsalted butter
4 cloves garlic, minced
Salt and pepper to taste
1 teaspoon Italian seasoning
8 oz fettuccine pasta
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup spinach, chopped
Fresh parsley for garnish
Directions:
Cook the Chicken:
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Season and Sear the Chicken:
Season the chicken pieces with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Prepare the Pasta:
Cook the fettuccine pasta according to the package instructions. Drain and set aside.
Make the Sauce:
In the same skillet, melt the remaining 2 tablespoons of butter. Pour in the heavy cream and bring to a simmer.
Add Cheese and Spinach:
Stir in the Parmesan cheese until it’s melted and smooth. Add the chopped spinach and cook for 2-3 minutes until wilted.
Combine Chicken and Pasta:
Return the cooked chicken to the skillet, along with the cooked fettuccine. Toss to combine, ensuring everything is coated in the creamy sauce. Cook for an additional 2 minutes to heat through.
Serve:
Serve the pasta immediately, garnished with fresh parsley.
