Crispy Lobster Bites with Garlic Butter Sauce
Ingredients:
1 lb lobster meat (claw, tail, or knuckle), cut into bite-sized chunks
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper (optional)
Salt and pepper to taste
Oil for frying
Garlic Butter Sauce:
4 tablespoons unsalted butter
3 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon chopped parsley
Pinch of salt
Directions:
Soak lobster chunks in buttermilk for 20–30 minutes.
In a separate bowl, mix flour, cornstarch, paprika, garlic powder, cayenne (if using), salt, and pepper.
Heat oil in a deep skillet or fryer to 350°F (175°C).
Dredge the soaked lobster chunks in the flour mixture, shaking off excess.
Fry the lobster bites in batches for 2–3 minutes until golden and crispy. Drain on a paper towel-lined plate.
For the garlic butter sauce, melt butter in a small pan over medium heat. Add garlic and sauté for 1–2 minutes until fragrant. Stir in lemon juice, parsley, and salt.
Drizzle warm garlic butter over the crispy lobster bites just before serving, or serve on the side for dipping.
