Slow Cooker Cowboy Casserole

Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
Instructions:
1. In a skillet, brown the ground beef with the chopped onion until cooked through. Drain any excess grease.
2. In a slow cooker, combine the cooked beef and onion mixture with the corn, black beans, diced tomatoes, tomato sauce, and taco seasoning. Stir to combine.
3. Cook on low for 6-8 hours or on high for 3-4 hours.
4. Sprinkle the shredded cheddar cheese over the top of the casserole during the last 30 minutes of cooking.
