🛒 Ingredients:
For the Meatballs:
500g ground beef or turkey
1 egg 🥚
2 tbsp breadcrumbs
2 tbsp fresh chopped dill 🌿
2 garlic cloves, minced
Salt & pepper to taste
1 tbsp olive oil for cooking
For the Dill Sauce:
200g Greek yogurt or sour cream
1 tbsp lemon juice 🍋
2 tbsp fresh chopped dill
Salt & pepper to taste
For the Bowl:
2 cups cooked rice 🍚
1/2 cucumber, sliced 🥒
1 cup cherry tomatoes, halved 🍅
1/2 small red onion, sliced
Fresh dill for garnish
👩🍳 Instructions:
In a bowl, mix all the meatball ingredients and form into small balls. Heat olive oil in a skillet over medium heat and cook the meatballs for 10–12 minutes, turning occasionally until golden brown and cooked through. Meanwhile, mix all ingredients for the dill sauce in a small bowl. Assemble the bowls with a layer of rice, then top with meatballs, fresh cucumber, tomatoes, red onion, and a generous spoonful of dill sauce. Garnish with extra dill and serve!

For extra flavor, serve with a lemon wedge or a pinch of chili flakes for some heat!
