Medium-Rare Beef Roast with Herb-Infused Compound Butter
Ingredients:
3-4 lb beef roast (such as ribeye or tenderloin)
2 tbsp olive oil
Salt and freshly cracked black pepper, to taste
2 sprigs fresh rosemary
2 cloves garlic, minced
1/4 cup unsalted butter, softened
1/4 cup black olives, finely chopped
1 tbsp fresh parsley, chopped (optional)
Instructions:
Prepare the Roast:
Preheat your oven to 400°F (200°C).
Pat the beef roast dry with paper towels to ensure a good sear. Rub the roast all over with olive oil, then season generously with salt and freshly cracked black pepper.
Sear the Roast:
Heat a large oven-safe skillet over medium-high heat. Once hot, add the roast and sear on all sides for about 2-3 minutes per side, until you get a rich, caramelized crust.
Roast the Beef:
After searing, place the skillet in the preheated oven and roast for about 25-30 minutes for medium-rare, or until the internal temperature reaches 130°F (54°C). Adjust the time based on your preferred level of doneness.
Remove from the oven and let the roast rest for 10 minutes before slicing.
Make the Compound Butter:
In a small bowl, mix the softened butter with minced garlic, chopped black olives, and fresh parsley if using. Stir until well combined.
Serve:
Slice the roast against the grain into thick slices. Place on a dark wooden cutting board, garnish with a sprig of fresh rosemary, and add a dollop of the garlic-olive compound butter on top. Allow the butter to melt slightly into the meat.
Enjoy:
Serve your perfectly cooked beef roast with a side of roasted vegetables or mashed potatoes, and enjoy the rich flavors of the beef enhanced by the herb-infused compound butter.
