Hot Cross Buns Recipe
Ingredients:
For the dough:
1 cup (240ml) warm milk (about 110°F/43°C)
1/4 cup (60g) sugar
2 1/4 tsp active dry yeast (1 packet)
1/2 cup (115g) unsalted butter, softened
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
2 large eggs
4 cups (480g) all-purpose flour
1/2 cup (80g) currants or raisins
1/4 cup (35g) chopped candied peel (optional)
For the cross:
1/4 cup (30g) all-purpose flour
1/4 cup (60ml) water
For the glaze:
1/4 cup (60ml) water
1/4 cup (50g) sugar
Instructions:
1. Activate the yeast:
In a small bowl, mix the warm milk and sugar. Sprinkle the yeast over the top and let it sit for 5-10 minutes until it becomes foamy.
2. Make the dough:
In a large bowl, combine the flour, salt, cinnamon, and nutmeg.
Add the yeast mixture, butter, and eggs to the dry ingredients. Mix until combined and form a dough.
Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.
Add the currants or raisins and chopped candied peel (if using) and knead to incorporate.
3. Let the dough rise:
Place the dough in a greased bowl and cover it with a clean kitchen towel. Let it rise in a warm place for about 1 hour or until it has doubled in size.
4. Shape the buns:
Punch down the dough to release the air. Turn it out onto a floured surface and divide it into 12 equal portions.
Shape each portion into a ball and place them in a greased 9x13-inch baking pan, arranging them closely together.
5. Prepare the cross:
In a small bowl, combine the flour and water to make a thick paste.
Transfer the paste to a piping bag or a plastic sandwich bag with the tip cut off.
Pipe a cross over the top of each bun.
6. Second rise:
Cover the buns with a kitchen towel and let them rise for another 30 minutes, or until puffed up.
7. Bake the buns:
Preheat the oven to 375°F (190°C).
Bake the buns for 15-20 minutes, or until golden brown on top.
8. Make the glaze:
While the buns are baking, combine the water and sugar in a small saucepan over medium heat. Stir until the sugar has dissolved and the syrup is clear.
Once the buns are baked, remove them from the oven and immediately brush them with the sugar syrup to give them a nice glossy finish.
9. Cool and serve:
Allow the buns to cool slightly before serving. Enjoy warm or at room temperature!
