Ingredients:
For the Cake:
2 cups all-purpose flour

ΒΌ cup freshly squeezed lemon juice
1 tbsp lemon zest
1Β½ tsp vanilla extract
1Β½ cups diced fresh strawberries (plus 1 tbsp flour to coat)
For the Glaze:
1 cup powdered sugar
2 tbsp lemon juice
1 tbsp crushed freeze-dried strawberries (optional for color + flavor)
Directions:
Preheat oven to 350Β°F (175Β°C). Grease and flour a loaf pan or 9-inch round cake pan.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In another bowl, beat sugar and butter until light and fluffy. Add eggs one at a time.
Mix in buttermilk, lemon juice, lemon zest, and vanilla until smooth.
Slowly add the dry ingredients to the wet, mixing just until combined.
Toss strawberries with 1 tbsp flour (this keeps them from sinking), then fold into the batter.
Pour into prepared pan and bake for 40β45 minutes, or until a toothpick comes out clean.
While cake cools, whisk glaze ingredients together. Drizzle over cooled cake.
