🧅 Mozzarella-Stuffed Onion Rings with Garlic Butter
Ingredients:
2 large onions, cut into 1/2-inch rings
8 oz mozzarella cheese, cut into sticks
1 cup all-purpose flour
2 eggs, beaten
1 1/2 cups panko breadcrumbs
1/2 tsp garlic powder
1/2 tsp salt
Oil for frying
Garlic Butter:
3 tbsp butter
2 cloves garlic, minced
1 tbsp chopped parsley (optional)
Instructions:
1️⃣ Prepare Onion Rings:
Separate onion slices into rings and match pairs of similar-sized rings.
Place a mozzarella stick between two matching rings and press gently to hold.
2️⃣ Bread the Rings:
Dredge each stuffed ring in flour, dip in beaten egg, then coat in breadcrumbs.
Repeat the egg and breadcrumb coating for a thicker crust.
3️⃣ Freeze:
Place rings on a tray and freeze for 30 minutes to help them hold their shape during frying.
4️⃣ Fry:
Heat oil in a deep skillet to 350°F (175°C). Fry rings in batches for 2–3 minutes per side until golden and crispy. Drain on paper towels.
5️⃣ Make Garlic Butter:
Melt butter in a small pan, add minced garlic, and cook for 1–2 minutes. Stir in parsley if using.
6️⃣ Serve:
Drizzle garlic butter over hot onion rings and serve immediately.
