Cheesy Garlic Parmesan Spaghetti with Cream Cheese Sauce

Ingredients:

1 pound spaghetti
4 tbsp butter
6 cloves garlic, minced
1/2 cup grated Parmesan cheese, plus more for serving
4 oz cream cheese, softened
1 cup heavy cream
1/2 cup reserved pasta water
1/4 cup chopped fresh basil
1/4 tsp red pepper flakes (optional)
Salt and freshly ground black pepper to taste
1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
2 tbsp chopped fresh parsley for garnish
1/4 cup toasted pine nuts for garnish

Directions:

1. Cook the spaghetti according to package directions until al dente. Reserve about 1/2 cup of the pasta water before draining.
2. While the pasta is cooking, melt the butter in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute, being careful not to burn it.
3. Stir in the Parmesan cheese and cream cheese until melted and smooth.
4. Pour in the heavy cream and whisk until the sauce is well combined and heated through.
5. Gradually add the reserved pasta water, stirring until the sauce reaches your desired consistency. Season with salt and pepper to taste.
6. Add the drained spaghetti to the skillet with the sauce and toss to coat evenly. Stir in the chopped sun-dried tomatoes, basil and red pepper flakes (if using).
7. Serve immediately, garnished with extra Parmesan cheese, fresh parsley and toasted pine nuts. Enjoy every creamy, cheesy bite!
