Velvety Cheesecake with Boston Cream Layers and Rich Chocolate Ganache
Ingredients:
Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/2 cup sour cream
1/4 cup all-purpose flour
Pastry Cream Topping:
2 cups whole milk
4 large egg yolks
1/3 cup granulated sugar
1/4 cup cornstarch
1 teaspoon vanilla extract
2 tablespoons unsalted butter
Chocolate Ganache:
3/4 cup heavy cream
6 oz semi-sweet chocolate, chopped
Directions:
Preheat oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture firmly into the bottom of the pan to form the crust. Bake for 10 minutes, then set aside to cool.
For the cheesecake filling, beat cream cheese until smooth. Add sugar and vanilla, beating until combined. Add eggs one at a time, then mix in sour cream and flour until just blended.
Pour the filling over the crust and bake for 55-65 minutes, or until the center is nearly set. Turn off oven, crack the door, and let the cheesecake rest for 1 hour.
Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
To make the pastry cream, heat milk in a saucepan over medium heat until just simmering. In a bowl, whisk yolks, sugar, and cornstarch. Slowly add the hot milk to the egg mixture, whisking constantly.
Return mixture to the saucepan and cook, stirring until thickened. Remove from heat, stir in vanilla and butter. Let cool slightly, then spread over the chilled cheesecake. Refrigerate again for 1 hour.
For the ganache, heat cream until simmering, then pour over chopped chocolate. Let sit for 2 minutes, then stir until smooth.
Pour ganache over the top of the pastry cream and gently spread to the edges. Chill until set.
Serve chilled and enjoy every creamy, chocolatey bite.
