Nova Scotia Blueberry Cream Cake π°π«
Ingredients:
1 1/2 cups all-purpose flour πΎ
1/2 cup white sugar π
1 1/2 teaspoons baking powder π₯
1/2 cup butter π§
1 egg π₯
1 teaspoon vanilla extract πΌ
4 cups fresh blueberries π«
2 cups sour cream πΆ
1/2 cup white sugar π
2 egg yolks π₯
1 teaspoon vanilla extract πΌ
Directions:
1. First things first, preheat your oven to 350Β°F (175Β°C) and give a 9-inch springform pan a light greasing to prevent sticking.
2. In a mixing bowl, whisk together the flour, sugar, and baking powder. Next, cut in the butter until the mixture looks like coarse crumbs. Stir in the egg and vanilla until you have a lovely soft dough. Now, press that delicious dough into the bottom of your prepared pan.
3. Spread those fresh blueberries evenly over your cake base. We want them to burst with flavor!
4. In another bowl, whisk together the sour cream, sugar, egg yolks, and vanilla until smooth. Pour this creamy mixture over the blueberries, and donβt be shy!
5. Pop the cake into your preheated oven and bake for 50-55 minutes until the topping is set and has a lovely light golden hue.
