Ingredients:
For the Fish Fingers:
1 lb white fish fillets (such as cod or haddock), cut into finger-sized strips
1 cup all-purpose flour
2 eggs, beaten
2 cups panko breadcrumbs

1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
Olive oil spray or vegetable oil for baking or frying
For the Peri Peri Fries:
4 large potatoes, cut into fries
2 tablespoons olive oil
1 tablespoon peri peri seasoning (store-bought or homemade)
Salt to taste
For the Beans:
1 can (15 ounces) of beans (such as navy beans or cannellini beans), drained and rinsed
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
Salt and pepper to taste
1/4 cup vegetable or chicken broth
1 tablespoon fresh parsley, chopped (optional)
Instructions:
1. Prepare the Fish Fingers:
Pat dry the fish fillets to remove any excess water.
In one bowl, mix the flour, garlic powder, paprika, salt, and pepper.
In another bowl, beat the eggs.
In a third bowl, combine the panko breadcrumbs.
Dredge each fish strip in the flour mixture, then dip it into the beaten eggs, and finally coat it with the panko breadcrumbs.
2. Cook the Fish Fingers:
Heat oil in a frying pan over medium heat and fry the fish fingers until golden and cooked through, about 3-4 minutes per side. Alternatively, you can bake them at 400°F (200°C) for 15-18 minutes, flipping halfway through.
