Old-Fashioned Heritage English Crumpets π₯β

π Ingredients (Makes 8β10 crumpets):
πΎ 250g strong white bread flour
π₯ 1 tsp sugar
π§ Β½ tsp salt
π₯ 1 tsp dried yeast
π₯ 300ml warm milk
π§ 100ml warm water
π₯ Β½ tsp bicarbonate of soda
π§ Butter, for greasing and serving
π³ Method:
1οΈβ£ Prepare the batter
π₯ In a bowl, mix the warm milk, sugar, and yeast. Leave it for 5β10 minutes until frothy.
πΎ In a separate large bowl, combine the flour and salt.
πΊ Gradually add the yeast mixture, stirring to form a smooth batter.
π§ Mix in the warm water, then cover the bowl and leave it to rest for 1 hour (until bubbly).
2οΈβ£ Add the bicarbonate of soda
π₯ Dissolve the bicarbonate of soda in 1 tbsp warm water and stir it into the batter.
β³ Let it rest for 15 minutes.
3οΈβ£ Cook the crumpets
π³ Heat a frying pan or griddle over medium-low heat and lightly grease it with butter.
π Grease crumpet rings (or metal cookie cutters) and place them in the pan.
π₯ Spoon batter into each ring (about 1cm thick).
π₯ Cook gently for 5β6 minutes until bubbles appear and set on top.
π Remove the rings and flip to cook for 1β2 minutes on the other side.
