Greek Chicken Meatballs with Homemade Tzatziki
Ingredients:
1 lb ground chicken
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 clove garlic, minced
1 egg
1 tsp dried oregano
Salt and pepper to taste
1 cup Greek yogurt
1/2 cucumber, grated
1 clove garlic, minced (for tzatziki)
1 tbsp olive oil
1 tbsp fresh lemon juice
Salt to taste
Instructions:
Preheat oven to 400°F (200°C).
In a bowl, mix ground chicken, breadcrumbs, Parmesan, parsley, garlic, egg, oregano, salt, and pepper. Form into meatballs.
Place meatballs on a baking sheet and bake for 20-25 minutes until cooked through.
For tzatziki, combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, and salt in a bowl.
Serve meatballs with tzatziki for dipping. Enjoy!
