HEALTHY TACO SHRIMP LETTUCE WRAPS 🍅🥬🌽🦐
Make your traditional tacos healthy with these shrimp taco lettuce wraps! They are full of delicious flavours, protein packed, low-carb and gluten-free.

RECIPE: 8-9 Shrimp Lettuce Wraps
Ingredients 🛒
Shrimp:
500g/1.1lb Shrimp (Fresh or Frozen)
1 Pkt Mild Taco Seasoning
1/3 Cup Olive Oil
2 Tbsp Fresh Lime Juice

Salad:
8 or 9 Lettuce Leaves, depending on size
200g/7oz Cherry Tomatoes (diced)
1/2 Small Onion
1/2 Cup Sweet Corn
1/4 Tsp Garlic Powder
2 Tbsp Olive Oil
2 Tbsp Chopped Fresh Parsley
Salt & Pepper

Avocado Mash:
2 Avocados
1/2 Lime, juiced

Sour Cream Sauce:
1 Jar (170g/6oz) Sour Cream
1/2 Lime, zest + juice
1/2 Tsp Sugar

Method:
Shrimp -
In a bowl, combine the shrimp, olive oil, taco seasoning and lime juice. Allow to marinate for 30 minutes.
In a skillet over medium heat, saute the shrimp for a few minutes on both sides until cooked.
Add remaining marinade which was left in the bowl and stir through just until the shrimp are covered in the sauce.

Salad -
In a bowl, mix together, the cherry tomatoes, onions, sweetcorn, parsley, olive oil, and season with salt and pepper to taste.

Avocado Mash -
In a bowl, add in the avocados, lime juice and season with salt and pepper to taste. With a fork, give them a rough mash.

Sour Cream Sauce:
Whisk all ingredients together. Taste and adjust anything if needed.

Assemble -
Wash and pat dry lettuce leaves.
Spoon and spread the avocado mash on top of lettuce leaves
Top with cherry tomato mixture, shrimp, sour cream sauce and garnish with lemon zest, freshly ground pepper and cilantro or parsley.
