Marguerites are something of a mystery. You’ll find them in recipe books from the early 1900s, the 20s, the 30s, even occasionally in the early 40s–and then they’re just gone. They vanish without a trace! No one mentions them again! Not Betty Crocker, not the Joy of Cooking, not Duncan Hines , not Anne Pillsbury..no one.
My Grandma Ward introduced me to this sweet 'n salty, marshmallow-y snack and I've been hooked ever since. My family ask for them often and enjoy every bite-sized morsel. Maybe the simplicity of these little gems is what drove them from the American cookbook, possibly thought not to be sophisticated enough. #nooneknows

2 fresh, large egg whites
1 teaspoon vanilla
4-5 Tablespoons fine sugar
1/4 cup chopped raisins
Saltine crackers
Preheat oven to 325 degrees
Whip egg whites 🥚 and vanilla until soft peaks form. Sprinkle sugar over egg whites and continue to whip till stiff peaks form. Fold in the raisins. Line a baking sheet with the saltine crackers and drop egg whites by spoonfuls 🥄 onto each cracker. Bake for 5-8 minutes or till tops are lightly browned like meringue for a pie.
*I sometimes fold in 1/4 cup of mini chocolate chips
* The number of Marguerites will depend on how big of a spoonful you drop onto the cracker, but expect at least a dozen or more.
You can easily double and triple this recipe
