Cheesecake-Stuffed Chocolate Cupcakes

Ingredients:

For the Chocolate Cupcake Batter:
- 1 cup (125g) all-purpose flour
- ½ cup (50g) unsweetened cocoa powder
- ¾ cup (150g) granulated sugar
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 1 egg
- ½ cup (120ml) milk
- ¼ cup (60ml) vegetable oil
- 1 tsp vanilla extract
- ½ cup (120ml) hot water or coffee

For the Cheesecake Filling:
- 6 oz (170g) cream cheese, softened
- 2 tbsp sugar
- 1 egg yolk
- ½ tsp vanilla extract

Directions:

1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
2. In a large bowl, sift together flour, cocoa powder, baking soda, baking powder, salt, and sugar.
3. In another bowl, whisk the egg, milk, vegetable oil, and vanilla extract until well combined.
4. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
5. Stir in the hot water or coffee slowly to create a thin batter.
6. In a separate bowl, beat the cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy.
7. Fill each cupcake liner halfway with chocolate batter.
8. Add about 1 tablespoon of cheesecake filling in the center of each cupcake.
9. Cover the cheesecake filling with more chocolate batter until the liners are about ¾ full.
10. Bake for 20-25 minutes or until a toothpick inserted near the edge comes out clean.
11. Allow cupcakes to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
