Spinach and Cheese Crustless Quiche
Ingredients:
1 tablespoon olive oil
1/2 onion, finely chopped
2 cups fresh spinach, chopped
1 cup shredded cheddar cheese
1/2 cup milk
4 large eggs
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
Directions:
Preheat your oven to 350°F (175°C). Grease a pie dish or quiche pan.
Heat olive oil in a pan over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
Add the spinach to the pan and cook until wilted, about 2 minutes. Remove from heat and let it cool slightly.
In a bowl, whisk together eggs, milk, garlic powder, salt, pepper, and nutmeg.
Stir in the sautéed spinach and onion mixture, then add the shredded cheddar cheese.
Pour the mixture into the prepared dish and bake for 30-35 minutes, or until the quiche is set and slightly golden on top.
Let cool for a few minutes before slicing and serving. Enjoy!
