- 2 salmon fillets
- 6 cups mixed greens (arugula, spinach, romaine)
- 1 avocado, sliced
- 1/2 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt & pepper to taste

**Directions:
