Creamy Slow Cooker Italian Sausage Pasta

Ingredients:

1 lb Italian chicken sausage, sliced
12 oz penne or rigatoni pasta
1 cup heavy cream
1 cup shredded mozzarella cheese
1 can (14.5 oz) diced tomatoes, undrained
1 onion, diced
3 garlic cloves, minced
1 tsp Italian seasoning
2 tbsp olive oil
Salt and pepper, to taste
Fresh basil, chopped (for garnish)

Directions:

Begin by heating the olive oil in a skillet over medium heat. Add the sliced Italian sausage and brown for 5-7 minutes, then transfer it to the slow cooker.
In the same skillet, cook the diced onion and garlic until soft and aromatic, then add them to the slow cooker along with the diced tomatoes (with juices), heavy cream, Italian seasoning, salt, and pepper. Mix everything together.
Cover the slow cooker and cook on low for 4-6 hours or high for 2-3 hours, allowing the sausage to cook through and the flavors to infuse.
When you're about 30 minutes from serving, cook the pasta according to the package instructions, then drain and set aside.
After the slow cooker has finished, stir in the cooked pasta and mozzarella cheese, letting it melt and coat the pasta in a luscious, creamy sauce.
Garnish with fresh basil before serving to add a pop of color and freshness.
