Grilled Lobster Tails
Ingredients:
4 lobster tails (5–6 oz each), thawed if frozen
1/4 cup unsalted butter, melted
2 cloves garlic, minced
1 tablespoon lemon juice
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Chopped fresh parsley, for garnish
Lemon wedges, for serving
Instructions:
1. Preheat grill to medium-high heat (about 400°F).
Time: 10 minutes
2. Using kitchen shears, cut through the top shell of each lobster tail down to the tail. Gently pull the shell apart and lift the meat to rest on top, keeping it attached at the base.
Time: 5 minutes
3. In a small bowl, whisk together melted butter, garlic, lemon juice, paprika, salt, and pepper.
Time: 2 minutes
4. Brush the lobster meat generously with the butter mixture. Reserve some for basting during grilling.
Time: 2 minutes
5. Place lobster tails meat-side down on the grill and cook for 4–5 minutes, then flip and grill shell-side down. Baste with remaining butter and grill another 3–4 minutes, until the meat is opaque and lightly charred.
Time: 8–10 minutes
6. Remove from grill, sprinkle with parsley, and serve with lemon wedges.
Pro tip: For the juiciest lobster, avoid overcooking—lobster is done when the internal temp reaches 135°F and the flesh is firm and white.
