ingredients:
- 1 Β½ cups almond flour (165 grams)
- 1 cup grated zucchini, squeezed to remove excess moisture (approximately 1 medium zucchini)
- Β½ teaspoon salt
- 1 tablespoon olive oil, plus more for cooking
- ΒΌ teaspoon garlic powder (optional)
directions:
1. In a medium bowl, combine the almond flour, squeezed grated zucchini, salt, and garlic powder (if using).
2. Stir in the olive oil until a dough forms. It should be slightly moist but not sticky. If it's too wet, add a little more almond flour.
3. Divide the dough into 4-6 equal portions.
4. Lightly oil a skillet or griddle over medium heat.
5. Take one portion of the dough and place it between two pieces of parchment paper. Roll it out thinly into a round or oval shape.
6. Carefully peel off the top layer of parchment paper and gently flip the flatbread onto the hot skillet.
7. Cook for 2-3 minutes per side, or until lightly golden brown and cooked through.
8. Repeat with the remaining dough.
9. Serve warm.
