Roasted Orange Chicken

Ingredients:
- 1/4 (about 1 kilogram or 2.2 pounds) chicken leg
- 3 oranges
- 2 oranges, juiced
- 1 tsp red chili flakes
- 4 sprigs of thyme
- 1/2 cup maple syrup
- 1/3 cup soy sauce (or gluten-free soy sauce like tamari)
- 1/4 cup olive oil

Instructions:

1. Preheat the oven to 200°C (400°F).

2. Prepare the chicken: Place the chicken leg in a roasting pan or a baking dish. Pat the chicken dry with paper towels.

3. Make the marinade:
- Zest and juice the 3 oranges. Combine the zest and juice in a bowl.
- Add the juice of the 2 additional oranges to the bowl.
- Stir in the maple syrup, soy sauce (or tamari), olive oil, red chili flakes, and fresh thyme sprigs. Mix well to combine.
