Hearty Beef and Pork Vegetable Soup
Ingredients:
• Meat:
• 1 lb (450g) beef stew meat, cut into bite-sized pieces
• 1 lb (450g) pork shoulder or pork stew meat, cut into bite-sized pieces
• Vegetables:
• 2 tablespoons olive oil
• 1 medium onion, chopped
• 3 cloves garlic, minced
• 3 carrots, sliced
• 2 celery stalks, sliced
• 1 bell pepper (any color), chopped
• 2 medium potatoes, diced
• 1 cup green beans, trimmed and cut into pieces
• 1 can (14.5 oz) diced tomatoes (with juice)
• Broth:
• 6 cups beef broth (or a combination of beef and vegetable broth)
• Seasonings:
• 2 teaspoons dried thyme
• 1 teaspoon dried oregano
• Salt and pepper to taste
• Optional: 1 bay leaf
