Ingredients
For the Teriyaki Chicken:
🍗 Chicken Breasts: 2, cooked and shredded
🧄 Garlic: 2 cloves, minced
🧅 Ginger: 1 tsp, minced
🛢️ Soy Sauce: 3 tbsp (low-sodium if preferred)
🍯 Honey: 1 tbsp (or a sugar-free alternative for keto)
🌶️ Chili Flakes: 1/2 tsp (optional for spice)
🍋 Rice Vinegar: 1 tsp
💧 Water: 2 tbsp
For the Bowl:
🥦 Broccoli Florets: 2 cups, steamed
🌾 Cauliflower Rice: 2 cups, steamed
Directions
Prepare the Teriyaki Sauce:
In a small pan over medium heat, combine soy sauce, honey, rice vinegar, garlic, ginger, and water. Simmer for 2-3 minutes until slightly thickened. Add chili flakes if using.
Cook the Chicken:
Add the shredded chicken to the pan with the teriyaki sauce. Mix well and simmer for another 5 minutes until the chicken absorbs the flavors.
Steam the Veggies:
In a steamer or microwave, steam the broccoli and cauliflower rice until tender (about 5-7 minutes).
Assemble the Bowl:
Divide the steamed cauliflower rice into two bowls. Add steamed broccoli to one side and teriyaki chicken to the other.
Serve & Enjoy:
Garnish with a sprinkle of sesame seeds or chopped green onions if desired.
Notes & Variations
Swap cauliflower rice with quinoa or brown rice for a higher-carb option.
Add some crunch with toasted sesame seeds or chopped nuts on top.
