2 salmon fillets (6 oz each)
1 tbsp olive oil π«
1 tsp smoked paprika πΆοΈ
Β½ tsp garlic powder π§
Β½ tsp ground cumin
Salt and black pepper to taste

For the Garlic Herb Potatoes π₯
2 cups baby potatoes, halved
1 tbsp olive oil π«
2 cloves garlic, minced π§
1 tsp dried thyme πΏ
1 tsp dried rosemary πΏ
Salt and pepper to taste
For the Cheesy Asparagus π₯¦
1 bunch asparagus, trimmed
1 tbsp olive oil π«
Β½ cup shredded mozzarella or Parmesan cheese π§
Β½ tsp garlic powder π§
Salt and pepper to taste
Directions
Prepare the Potatoes:
Preheat oven to 400Β°F (200Β°C). Toss the baby potatoes with olive oil, garlic, thyme, rosemary, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway, until golden and crispy.
Cook the Salmon:
Rub salmon fillets with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Heat a nonstick skillet over medium heat and sear the salmon for 4-5 minutes per side, or until cooked through. Remove and set aside.
Make the Cheesy Asparagus:
Toss the asparagus with olive oil, garlic powder, salt, and pepper. Lay on a baking sheet. Sprinkle shredded cheese over the asparagus and bake in the same oven as the potatoes for the last 10 minutes, or until the cheese is melted and bubbly.
Plate the Dish:
Arrange the spiced salmon, roasted potatoes, and cheesy asparagus on a plate. Garnish with fresh parsley and serve with lemon wedges.
Notes:
Swap potatoes with sweet potatoes for a healthier twist.
Use grated cheddar for a richer cheesy asparagus flavor.
Add a pinch of chili flakes to the salmon for a spicy kick.
