Homemade Caponata Siciliana Recipe 🇮🇹🍆🍅
A classic Sicilian dish! Full of Mediterranean flavors! ✨
Ingredients:
• 2 eggplants, diced
• 2 tbsp olive oil (30ml)
• 1 onion, chopped
• 2 tomatoes, chopped
• 2 tbsp capers
• 1/4 cup green olives, sliced (40g)
• 2 tbsp red wine vinegar (30ml)
• 1 tbsp sugar
• Salt and black pepper to taste
Instructions:
Fry diced eggplant in olive oil until golden. Set aside.
Sauté onion, then add tomatoes, capers, and olives.
Add vinegar, sugar, salt, and pepper. Cook for 10 minutes.
Return eggplant to the pan, mix well.
Serve warm or cold with crusty bread!
