Chorizo and Halloumi Pasta

Ingredients:

250 g pasta (penne or other short pasta)
1 tsp olive oil
1 red onion, peeled and chopped
2 garlic cloves, peeled and chopped
2 tsp smoked paprika
1 tsp oregano
225 g halloumi, cut into cubes
200 g chorizo, sliced into 1cm pieces
500 ml passata (or 1 tin chopped tomatoes)
2 tsp sugar
3 tbsp double cream
50 g Grana Padano, grated (or Parmesan)
2 tbsp parsley, chopped
Directions:

Cook pasta in boiling water until al dente. Reserve 1 cup of pasta water, drain, and set aside.
Heat olive oil in a pan over medium heat. Sauté onion and garlic for 3-4 minutes.
Stir in smoked paprika and oregano, cooking for 1 minute.
Add halloumi cubes and chorizo. Increase heat and fry until halloumi turns golden.
Mix in passata, sugar, and cream. Simmer on low heat for 10 minutes.
Add cooked pasta and stir to coat. Use reserved pasta water, a few tablespoons at a time, for a silky sauce.
Serve with grated Grana Padano and parsley.
