Leftover Mashed Potato Cheese Puffs

Ingredients:
2 cups leftover mashed potatoes
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 tablespoons chopped chives (optional)
1/4 teaspoon garlic powder
Salt and pepper to taste
2 large eggs, beaten
1/2 cup breadcrumbs
Cooking spray or oil for greasing
Directions:
Preheat Oven: Preheat your oven to 400°F (200°C). Grease a baking sheet with cooking spray or oil.
Mix Ingredients: In a large mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, chives (if using), garlic powder, salt, and pepper.
Form Puffs: Scoop spoonfuls of the mixture and shape them into small balls or patties.
Coat: Dip each ball in beaten eggs, then roll in breadcrumbs until evenly coated.
