BLACKBERRY CAKE #mothersday
Preheat oven to 350 degrees F.
Grease and flour 2 - 8" round cake pans
Cream together
1 ccup shortening
1 cup sugar
ADD
3 large eggs, mix
in seperate bowl whisk together
2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
pinch of salt
1/2 tsp. cinnamon
pinch of allspice or to taste
pinch of ground cloves or to taste
ADD DRY INGREDIENTS ALTERNATELY WITH
2/3 cup buttermilk
FOLD IN
1 cup blackberry jam
Pour batter into prepared pans and bake for 40- 45 minutes. Until a toohpick inserted into center of cake comes out clean. Cool cakes completely and frost with Blackberry Butter Cream.

BLACKBERRY BUTTERCREAM
1 cup fresh blackberries
1 1/2 cups butter, softened
1/2 cup shortening
2 teaspoon vanilla extract
Dash salt
7 cups confectioners' sugar
Place blackberries in a blender; cover and process until pureed. Press through a fine mesh strainer into a bowl; discard seeds.
In a large bowl, beat butter until creamy. Beat in vanilla and salt. Gradually beat in confectioners’ sugar until smooth. Add blackberry puree; beat until blended. Frost cake. Decorate as desired.
