Shrimp and Pea Pasta with Garlic Sauce
Garlic Butter Shrimp Pasta with Sweet Peas
Ingredients:
8 oz penne or linguine pasta
2 tablespoons olive oil
1 tablespoon unsalted butter
4 garlic cloves, minced
1/2 teaspoon red pepper flakes (optional)
1 lb large shrimp, peeled and deveined
1 cup green peas (fresh or thawed if frozen)
1/2 cup low-sodium vegetable broth
1/2 cup grated Parmesan cheese
Zest and juice of 1 lemon
Salt and freshly cracked black pepper to taste
2 tablespoons chopped fresh parsley
Directions:
Cook pasta in salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
In a large skillet, heat olive oil and butter over medium heat. Add the garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side or until pink and opaque.
Stir in the peas and vegetable broth, letting the mixture simmer for 2 minutes.
Add the cooked pasta to the skillet and toss everything together. Stir in Parmesan cheese, lemon zest, and lemon juice. Add a splash of reserved pasta water if needed to loosen the sauce.
Sprinkle with chopped parsley and serve immediately.
