📌 Ingredients:
For the Chicken:
2 boneless skinless chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
Salt & black pepper to taste
For the Alfredo Pasta:
12 oz rigatoni or penne pasta
2 tbsp butter
4 cloves garlic (minced)
1 ½ cups heavy cream
1 cup grated Parmesan cheese
Salt & black pepper to taste
Optional: pinch of Italian seasoning
Veggies:
1 cup broccoli florets (blanched or steamed)
1/2 red bell pepper (sliced)
1/2 green bell pepper (sliced)
1 tbsp olive oil
👨🍳 Instructions:
Step 1: Season & Cook the Chicken
Pound chicken for even thickness. Season both sides with spices.
Heat olive oil in a skillet over medium-high heat.
Sear chicken for 4–5 minutes per side until blackened and cooked through.
Rest 5 mins, then slice.
Step 2: Sauté the Veggies
In the same skillet, add olive oil if needed.
Sauté peppers and steamed broccoli until tender and slightly charred. Set aside.
Step 3: Make the Alfredo Sauce
In a saucepan, melt butter and sauté garlic until fragrant.
Add heavy cream and bring to a low simmer.
Stir in Parmesan, salt, pepper, and Italian seasoning.
Simmer until thick and creamy (about 5–7 mins).
Step 4: Cook the Pasta
Boil pasta until al dente. Drain and toss with Alfredo sauce and veggies.
Step 5: Assemble
Plate the creamy pasta, top with sliced blackened chicken, and finish with a sprinkle of fresh Parmesan or parsley. 🔥
