Grilled Chicken Penne with Tomato Basil Sauce
Char-Grilled Chicken Pasta with Rustic Tomato Basil Bliss
Ingredients:
2 boneless, skinless chicken breasts
8 oz penne pasta
1 tablespoon olive oil
2 cups cherry tomatoes, halved
3 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
1/4 teaspoon black pepper
Salt to taste
1/2 teaspoon dried oregano
1/4 cup tomato paste
1/4 cup water
1/2 cup fresh basil leaves, chopped
1/4 cup grated Parmesan cheese (optional for garnish)
Directions:
Cook penne pasta in a large pot of salted boiling water according to package directions. Drain and set aside.
Season chicken breasts with salt, pepper, and oregano. Grill on medium-high heat for 5–6 minutes per side, or until fully cooked and juices run clear. Let rest, then slice thinly.
In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes; sauté for 1 minute until fragrant.
Stir in cherry tomatoes and cook for 4–5 minutes until softened. Add tomato paste and water; stir to combine into a rich sauce.
Toss in cooked penne and stir well to coat the pasta evenly. Let it simmer for 2–3 minutes.
Add chopped basil and sliced grilled chicken. Mix gently to combine and heat through.
Serve hot, garnished with Parmesan if desired.
